      calories are a measure of the energy in things – technically ” a Calorie as the heat needed to raise the temperature of 1 kg of water from 0 to 1°C. ”

      For food, you can burn the food in a closed chamber surrounded by a layer of water and measure how much the water is heated up by burning the food. That tells you how much energy (how many calories) are in that food…
