Food goes off when funi and bacteria grow on it… things grow quicker when it’s warm and so putting something in the freezer slows down the growth of fungi and bacteria so much that food in the freezer can last for months instead of days…
Also bacteria have an “optimum temperature” so it’s the ideal temperature the bacteria grows at. -18 c the bacteria don’t grow virtually at all, so the foods stay alright for longer!
